A great cultural significance, mole is more than just the national dish. Serving the dish is considered a gesture of great hospitality and respect, as its preparation often includes over 20 ingredients, requiring significant effort and skill. It's a way of showing care and honoring guests. Served up oceanfront at its acclaimed farm and sea restaurant, Encanto, the new interactive class at Mar del Cabo is led by executive chef Mario Rueda. Participants will dive into the rich heritage of the sauce and explore the different varieties, including the thick, rich, red poblano mole and rosa mole from Taxco that gets its unique hue from the pink colored pine nuts that comprise the dish. The hands-on experience guides guests through each step of making mole from scratch, emphasizing the balance of chili peppers, chocolate, and spices used to craft the unique flavor of the sauce. The class also covers traditional accompaniments, such as rice and tortillas, while offering insights into mole's role in Mexican celebrations and family gatherings. In addition to learning the recipe, participants receive a recipe book to recreate the mole at home, along with practical tips for ingredient substitutions and variations.
